In reality, today is National Mousse (not moose) Day, which is why I was inspired to make my famous Chocolate Almond Mousse. I LOVE this recipe. I remember on my twelfth birthday, I asked my Mom if I could have this mousse instead of a birthday cake. THAT's how awesome it is. It's super easy to make, and I swap out the full fat/full sugar ingredients to make it just a tad "healthy".
Ingredients:
1 square unsweetened chocolate
1 large package sugar free chocolate pudding
1 can sweetened condensed milk, fat free
1 cup cold water
1/2 teaspoon almond extract
1 container sugar free Cool Whip
Melt the unsweetened chocolate in the bowl of your electric mixer in the microwave, about 90 seconds. Stir every 30 seconds. Add the pudding mix and the sweetened condensed milk and beat with an electric mixer on medium-high until combined. Add the cold water and the almond extract and mix until combined. Place the bowl in the freezer for 5 minutes. Gently fold in the Cool Whip. Keep refrigerated until ready to serve. (I topped mine with white chocolate shavings).
