Memorial Day weekend is upon us. Do you know what I was doing last year at this time?

But what about this pizza? Have you ever grilled a pizza? If not, you should. It gives it a great smoky flavor.
Have you ever made a mango bbq pizza sauce? If not, you’ll want to. It’s really yummy. It's sweet and tangy and a little spicy if you so desire! Oh, and there’s bacon on top.
1 15-ounce can tomato sauce
½ cup tomato paste
1 ½ cups frozen mango pieces
1 tablespoon honey
4 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
½ habanero pepper, diced (or ½ teaspoon cayenne pepper)
Salt and pepper
Cooking spray
6 slices center cut or turkey bacon, cooked and crumbled
into small pieces
½ red onion, thinly sliced
5 petite bell peppers, thinly sliced
1 cup chopped, cooked chicken breast or pork loin
2 cups part-skim mozzarella cheese
Prepare the pizza dough.
In a small saucepan over medium-high heat, add the tomato
sauce, tomato paste, mango, honey, vinegar, Worcestershire sauce, and hot
pepper. Bring to a simmer, reduce heat
to medium, and cook for about 10 minutes.
Season to taste with salt and pepper.
Puree the sauce using an immersion blender or regular blender.
Preheat the grill to medium high. Separate the dough into 4 parts, and gently
roll out into 4 pizzas. Spray the grill
rack with cooking spray, and place each pizza directly on the grill rack. Grill for about 3 minutes, until small
bubbles form in the dough. Flip each
pizza over.
Top each pizza with a quarter of the sauce, the bacon,
peppers, onions, and chopped meat. Sprinkle
½ cup of cheese on top of each pizza.
Close the lid on the grill and cook for about 5 minutes more, until the cheese is melted.
Remove from the grill. Cut each pizza into 4 pieces and serve

I love grilled pizza and mango. The sauce looks so good. I can't wait to try it.
