Remember when I went a little stir crazy over a lack of carbs? Well this dish was the only healthy meal that came out of that gloriously tasty revolt.
You may be wondering how I managed to stop shoving Buffalo Chicken Grilled Cheeses in my mouth long enough to invent this salad? Well, it wasn't easy.
But, my main motivator was that I didn't want Mike to come home to find me passed out in a carb-induced coma on the couch with a trail of buffalo chicken salad and bread crumbs laying all around me. Can you say caught red-handed?
So rather than trying to explain to Mike why there were no more sandwiches left for him to eat, I found some lettuce. And let me tell you, it was 99.2% worth it.
New topic... Celery. I used to hate it. Now I sorta like it, but only when dipped in a mound of chunky blue cheese as a chaser for hot chicken wings. BUT... when you pickle it with a little honey and vinegar, like so, it is mighty delicious.
I think it's a genius invention that I should patent.
Ingredients: (Makes 1 salad)
1 spear of romaine lettuce, washed, dried, and chopped
1 cup Buffalo Chicken Salad
2 tablespoons blue cheese crumbles
2 tablespoons pickled celery
2 tablespoons Ranch salad dressing
Combine all the ingredients to your heart's desire!
