Thanksgiving Leftovers - Buffalo Blue Cheese Turkey Sandwich


Not sure what to eat the day after Thanksgiving? While you're still in your food coma and desperately trying to refuel in between the Black Friday sales at the mall? 

Well I have just the thing for you. This sandwich is definitely worthy of those amazing turkey leftovers, yet simple enough to assemble even during your tryptophan high.

Ingredients:
Your awesome turkey leftovers (or thick-cut turkey from the deli)

Light mayonnaise
Blue cheese or Gorgonzola crumbles
Frank's hot sauce
Romaine lettuce spears
Whole wheat sub rolls
Salt and pepper, to taste

To assemble the sandwich: 

Spread some of the mayonnaise on the top and bottom of your sub rolls. Season lightly with salt and pepper, if desired. Shake about 2 tablespoons of Frank's hot sauce on top of the bottom sub roll. Top with 1/8 cup of blue cheese crumbles. Top with the turkey and lettuce and the top of the roll. Enjoy!
